We always get fantastic feedback regarding the taste and quality of our products and below are the ingredient details for our different product types. All of them are topped with the same icing and the printed image uses the same edible ink.

Sponge Cake – Full cakes and cupcakes

  • Sponge Cake Mix – Free range eggs, sugar, flour, butter, golden syrup, (Chocolate cake includes cocoa powder), (Lemon cake
    Includes lemon zest), (Gluten free cakes include Doves Farm wheat free flour).
  • Vanilla Filling – Buttercream, Strawberry Jam (see detailed ingredients below)
  • Lemon Filling – Buttercream, Lemon Curd (see detailed ingredients below)
  • Light Chocolate Filling – Buttercream, Cocoa Powder.

Shortbread Biscuit

  • Small Round Shortbread – Wheat flour, Butter (MILK), Sugar, Cornflour. Topper: Sugar Paste Icing, Royal Icing.  May contain traces of nuts
  • Square and Large Round Shortbread – Wheat flour, Butter (18.75%), Sugar, Cornflour, Ground Rice, Salt, Topper: Sugar Paste Icing, Strawberry Jam. May contain traces of nuts.
  • Shaped Shortbread – Wheat flour, Sugar, Vegetable Oil (Rapeseed), Salt. Topper: Sugar Paste Icing, Royal Icing. May contain nut traces.

Ginger Biscuits

  • Small Round Gingernut –Wheatflour, Sugar, Vegetable Oils (Palm Oil, Palm Stearin Oil) Invert Sugar Syrup, Ground Ginger, Raising Agents: Ammonium Carbonates, Sodium Carbonates, Salt, Flavouring.  Topper: Sugar Paste Icing, Royal Icing. May contain traces of nuts.
  • Large Round Ginger -Wheat flour, Sugar, Margarine (Veg Oil, Water, Salt, Emulsifier (E471) Flavouring), Whole Egg, Treacle, Ginger Powder, Raising Agent (E450, 500) May contain traces of nuts.Topper: Sugar Paste Icing, Royal Icing.
  • Shaped Ginger Biscuit – Wheat Flour. Golden Syrup, Butter, Brown Sugar, Ground Ginger, Bicarbonate of Soda. Topper: Sugar Paste Icing, Royal Icing.



Oats (46.5%), Sugar, vegetable Oil (Palm, Rapeseed), Dextrose, Skimmed Milk Powder, Salet, Flavouring, Colour (Paprika Extract). Topper: Sugar Paste Icing, Royal Icing.

The following ingredients form part of many of our products.


We use a high quality sugar paste icing that is specially formulated to provide the best surface to print logos and images.  The ingredients for our icing are: Sugar, vegetable oil, glucose syrup, Humectants (E420, E422), water, Stabilisers (E413, E415), flavouring, colour (E171), Emulsifier (E472©), Acidity regulators (E270, E325), Preservative (E202).

Royal Icing

We use Royal Icing to attach some of the logo branded toppers to cakes and biscuits.  The ingredients of Royal Icing are: Wheat starch, Dried egg albumen, Sugar, Modified starch, Acidity regulators: Calcium lactate, tartaric acid, cream of tartar, lactic acid. Dextrose, Stabiliser: Guar gum. Icing Sugar. Water.

Edible Ink

Our images are printed using edible ink in four colours Cyan, Magenta, Yellow and Black (CMYK),  Ingredients for our ink are: Water, Ethanol, Glycerin, artificial colouring – may contain the following: FD&C red 40, FD&C blue 1, FD&C red 3, FD&C yellow 5, Emulsifiers, polysorbate 80, preservative, methylparaben (0.1%)

Jam and Lemon Curd

We use Strawberry Jam and Lemon Curd in some of our products as detailed below.  Their ingredients are:

  • Strawberry Jam – Glucose-Fructose Syrup, Strawberries, Gelling Agent: Pectin: Acid: Citric Acid; Acidity Regulator: Sodium Citrates.
  • Lemon Curd – Glucose-Fructose Syrup, Sugar, Water, LEMON JUICE FROM CONCENTRATE (8%), Margarine [Vegetable Oil (Palm, Rapeseed, Pal Fractions), Water], Maize Starch, Dried Whole Egg, Gelling Agent: Pectin: Acid: Citric Acid; Acidity Regulator: Sodium Citrates.; Colours: Lutein, Beta-Carotene: Lemon Oil, Antioxidant: Ascorbic Acid.
